Meatball Soup

Ingredients for Meatballs:

  • 1 lb Ground pork
  • 1 lb Ground beef
  • 200 g Rice
  • 2 Eggs
  • Parsley
  • Salt
  • Pepper

Ingredients for Soup:

  • 2 Onions
  • 3 – 4 Carrots
  • 15 oz Tomato Sauce
  • 4 Eggs
  • Parsley
  • 1 L Sauerkraut Juice

Directions:

  1. Heat the onions, carrots, and pepper in a medium-size pot until boiling. Cover pot with a lid.
  2. Meanwhile, make the meatballs by combining the meat, rice, eggs, chopped parsley, rice, salt, and pepper. Shape meat in medium-size balls, and set them on a plate.
  3. Add the meatballs to the soup, along with the Sauerkraut Juice and Tomato Sauce.
  4. Cook until the carrots and onions are tender.
  5. Add the remaining chopped parsley, and beaten eggs to the soup (optional).
