Spinach Rolls are sophisticated appetizers that are easy to make. Not only do they look beautiful but they are also delicious, and healthy. They can be made for any occasion (snacks for kids, guests over, holidays, etc.) but the green color of spinach makes it special for Sf. Patrick’s Day.
Ingredients:
750 g Spinach
300 g Cream Cheese (my favorite is this Boursin Garlic and Herb Puck Cheese)
200 g Smoked Salmon
100 g Almond Flour (regular flour is a less healthy alternative)
6 eggs
Baking Soda
1 garlic clove
Salt, Black Pepper
Preparation Method
- In a blender, mix the spinach, eggs, and garlic until it forms a paste.
- Then add the almond flour, baking soda, salt and pepper the above paste.
- Transfer the paste to a baking pan (35 cm x 45 cm) covered with parchment paper, and spread the mixture evenly.
- Bake it at 355 F for ~20 min.
- Take it out of the oven, and let it cool down for 2 min.
- Once it is still warm, roll the spinach layer.
- Once it reaches room temperature, unroll it, and remove the parchment paper.
- On top of the spinach layer, spread the cream cheese, then add the slices of smoked salmon, and roll tightly the spinach layer (without the paper).
- Wrap the roll in the parchment paper, and refrigerate for min 2 hrs.
- Once cool, slice the role, and serve.
