Buttermilk Pancakes

Ingredients

Dry Ingredients

1 cup (130 g) all-purpose flour

1 teaspoon (5 g) baking powder

1/4 teaspoon (1.25 g) baking soda

1/4 teaspoon (1.25 g) salt

2 tablespoons (28 g) granulated white sugar

Wet Ingredients

1 large egg, lightly beaten

1 cup (240 mL) buttermilk

3 tablespoons (40 g) unsalted butter, melted plus extra melted butter for coating the pan.

Directions

  1. In a bowl, mix together the flour, sugar, baking powder, and baking soda.
  2. In a separate bowl, mix together the egg, melted butter, and buttermilk.
  3. Make a well in the center of the dry ingredients, and then add the mixture from #2 above.
  4. Stir until a homogenous mixture is formed.
  5. Heat a pan over high heat, and brush the pan with melted butter using a pastry brush.
  6. Pour about 3/4 ladle of batter onto the hot pan.
  7. Cook until lightly brown, and turn over (~4-5 minutes for both sides).
  8. Repeat until all the batter is used up.
  9. Serve with apricot jam, or maple syrup.
