Chicken Liver Pate

Liver is one of the healthiest types of food as it contains high amounts of protein, iron, B Vitamins, and Vitamin A.  It’s also a good source of Vitamin C, potassium, phosphorus, and copper.

Ingredients

  • 1 Onion
  • 5 Large chicken livers
  • 5 Anchovy fillets in oil, or smoked salmon
  • Olive oil
  • Butter (several cubes at room temp)
  • Half and half (optional)
  • Parsley
  • Black pepper
  • Salt

Directions

  1. Clean the liver, and remove all the fat and connective tissue.
  2. Sauté the liver until the color changes, and stir occasionally.
  3. Add the chopped onion.
  4. Once the onion is done, add parsley.
  5. Let it cool down.
  6. Meanwhile, drain and mince the anchovies.
  7. To the cooled mixture above, add the anchovies (or smoked salmon), salt, black pepper, butter, and a little Half and half for a more fluid consistency.
  8. Transfer the mixture to a food processor, and puree to a smooth paste.
  9. Store the pate in an airtight container, and refrigerate.
  10. Spread it on crackers or crusty bread. You can use parsley leaves to garnish.
