Here is an easy recipe for pickled carrots.
Ingredients
- ½ lb carrots
- ½ cup of distilled white vinegar
- ½ cup of water
- Several slices of onion
- Several cloves of garlic, minced
- 4 peppercorns
- 1 bay leaf
- 1 tsp of salt
Directions
- Combine all the above ingredients except the carrots in a pot.
- Bring it to a boil.
- Add the carrots to the mixture, and simmer for about 15 minutes.
- Cool and store in airtight Mason jars in the fridge for up to two weeks.
- They are more flavorful after sitting for 1-2 days if you can resist.
