Pickled Carrots

Pickled carrots are a delicious and nutritious snack that can pair well with most of the dishes.  Carrots are rich in a variety of nutrients including Vitamins A and B.

Here is an easy recipe for pickled carrots.

Ingredients

  • ½ lb carrots
  • ½ cup of distilled white vinegar
  • ½ cup of water
  • Several slices of onion
  • Several cloves of garlic, minced
  • 4 peppercorns
  • 1 bay leaf
  • 1 tsp of salt

Directions

  1. Combine all the above ingredients except the carrots in a pot.
  2. Bring it to a boil.
  3. Add the carrots to the mixture, and simmer for about 15 minutes.
  4. Cool and store in airtight Mason jars in the fridge for up to two weeks.
  5. They are more flavorful after sitting for 1-2 days if you can resist.
