Vegetarian Quesadillas with Spinach and Eggs

Quesadillas are versatile, nutritious, and easy to make for last-minute lunch or dinner ideas.  The Italian salsa is optional.  Spinach and eggs offer them the nutrients you need in your daily diet such as iron, vitamin C, vitamin D, vitamins B2 & 12, choline, folate, to name a few.

Ingredients

Tortillas

Shredded cheese

Spinach

Eggs

Salsa ingredients: chopped tomatoes, red onion, balsamic vinegar, and olive oil

Instructions

  1. Boil several eggs beforehand; slice them once cool.
  2. Prepare Italian salsa from chopped tomatoes, red onion, balsamic vinegar, and olive oil.
  3. Place a tortilla in a skillet over medium to high heat
  4. Add shredded cheese, spinach, and sliced egg
  5. Add the second tortilla on top, and press gently
  6. Cook several minutes on each side until cheese is melted.
  7. Cut in slice, and add the freshly made salsa on top.
  8. Enjoy!
