How to pickle mushrooms

Pickled mushrooms are a delicious and nutritious snack that can pair well with most of the dishes – salmon, steak, chicken, you name it.  Mushrooms are considered a superfood given the high content of nutrients, vitamin D being the most notorious vitamin.

Here is an easy recipe for marinated mushrooms:

½ lb mushrooms

½ cup of distilled white vinegar

½ cup of water

Several slices of onion

Several cloves of garlic, minced

4 peppercorns

1 bay leaf

1 tsp of salt

  1. Combine all the above ingredients except the mushrooms in a pot.
  2. Bring it to a boil.
  3. Add the mushrooms to the mixture, and simmer for about 15 minutes.
  4. Cool and store in airtight Mason jars in the fridge for up to two weeks.

Ideally, they are more flavorful after sitting for 1-2 days if you can resist.
