Avocado Salad

Today, I am going to post a very easy recipe for a nutritious avocado salad since it’s related to my last post, Dietary Fats. I consider avocado a superfood since it’s packed with healthy omega-6 fatty acids, fiber, and numerous vitamins and minerals.  I recommend this salad even to people who suffer from obesity (eaten in moderation, of course) simply because its high fiber content helps us feel full after eating hence, we tend to eat less.  In addition, it’s packed with tremendous amounts of vitamin C, which helps us maintain a strong immune system.

I make my own dressing to avoid unnecessary extra ingredients that are typically found in the store dressing, particularly added sugar.  Enjoy!

Here is what you need:

Avocado

Bell pepper (preferably red as it’s packed with more nutrients)

Onion (preferably red)

Olive Oil (I prefer the smooth taste of Colavita extra virgin Oil – first cold press – but this is a personal preference).  I usually buy it from Whole Foods through Amazon Fresh.

Balsamic Vinegar (I also buy it from Whole Foods through Amazon Fresh).
